Prune ring cake

Ingredients:

  • 1 egg
  • ½ cup sugar
  • ¾ cup sunflower oil
  • 1 teaspoon vanilla extract
  • 1 ½ cups prunes, cubed
  • 1 cup milk
  • 2 ¼ cups self-rising flour
  • ½ cup boiling water
  • 1 teaspoon baking soda
  • ½ cup brandy

Directions:

Place prunes, boiling water, baking soda and brandy in a bowl. Sit for 12 hours.

Preheat oven at minimum temperature. Blend egg, sugar, oil and vanilla extract.

Add previously moistured prunes and milk and blend together. Add flour and blend.

Butter a 9-inch ring pan. Bake at 300°F for 40 minutes.
