Dried cranberry muffins

  • 2 eggs
  • ½ cup sugar
  • ¾ cup sunflower oil
  • 1 teaspoon vanilla extract
  • 1 ¾ cups dried cranberries
  • 1 cup milk
  • 2 ¼ cups self-rising flour

Preheat oven at minimum temperature.

Beat eggs. Add sugar, oil and vanilla extract and beat until smooth.

Add cranberries and milk, blend together. Add flour and blend until smooth.

Fill greased muffin pans 2/3 full. Bake at 300°F for 20-30 minutes.
