Dried Apricot Tart

Ingredients:

  • ¾ cup mascarpone cheese or ricotta
  • ¾ cup powder sugar
  • 1 ½ cups almonds, chopped
  • 1 egg and 1 yolk
  • 2 spoons self-rising flour
  • 1 unbaked pie crust
  • 1 ½ cups dried apricots, in halves

Directions:

Preheat oven at minimum temperature. Beat mascarpone cheese or ricotta with powder sugar. Add almonds, egg, yolk, and flour and blend smooth. Set aside

Butter a 9-inch pie dish and cover with pie crust. Press crust and prick with a fork. Pour mascarpone or ricotta filling over crust and even out.

Place apricots in a pattern over filling and sprinkle with chopped almonds.

Bake at 250°F for 50-60 minutes.
