  • 40z. thick peach flavored yogurt
  • 2oz. dried peaches, cubed
  • 1oz. cereal, at choice

Directions:

Place dried peaches in a glass or small bowl.

Add yogurt.

Serve with cereal topping.

Ice-cream and dried Pears Pancakes

Ingredients:

  • 2 eggs
  • 2 ½ cups milk
  • 1 ½ cups flour
  • ½ cup sunflower oil
  • 35oz. cream flavored ice-cream
  • 1 ½ cups dried pears, cubed
  • powder sugar
  • chocolate fudge

Directions:

In a bowl, beat eggs, milk, oil and flour until smooth. Sit for 1 hour.

Heat pancake maker or small pan. Pour mix to shape a round pancakes.

When golden on one side, turn over to finish cooking.

Serve with ice-cream and top with cubed pears, chocolate fudge and sprinkled powder sugar.

Dried Apricot Tart

Ingredients:

  • ¾ cup mascarpone cheese or ricotta
  • ¾ cup powder sugar
  • 1 ½ cups almonds, chopped
  • 1 egg and 1 yolk
  • 2 spoons self-rising flour
  • 1 unbaked pie crust
  • 1 ½ cups dried apricots, in halves

Directions:

Preheat oven at minimum temperature. Beat mascarpone cheese or ricotta with powder sugar. Add almonds, egg, yolk, and flour and blend smooth. Set aside

Butter a 9-inch pie dish and cover with pie crust. Press crust and prick with a fork. Pour mascarpone or ricotta filling over crust and even out.

Place apricots in a pattern over filling and sprinkle with chopped almonds.

Bake at 250°F for 50-60 minutes.

Add cranberries and milk, blend together. Add flour and blend until smooth.

Fill greased muffin pans 2/3 full. Bake at 300°F for 20-30 minutes.

  • 3 eggs
  • 1 cup sugar
  • 1 cup butter, softened
  • 1 teaspoon vanilla extract
  • 4 cups self-rising flour
  • 1 cup dried strawberries, cubed

Directions:

Preheat oven at minimum temperature. Beat eggs. Add sugar, butter and vanilla extract and beat until smooth.

Add strawberries and blend. Gradually add flour and knead until smooth.

Sprinkle flour on countertop for dough not to stick. Roll out dough 2-inches thick and cut cookies.

Place on buttered baking sheet and bake at 300°F for 15 minutes.

  • ½ cup sugar
  • ¾ cup sunflower oil

  • 1 ½ cups prunes, cubed
  • 1 cup milk
  • 2 ¼ cups self-rising flour
  • ½ cup boiling water
  • 1 teaspoon baking soda
  • ½ cup brandy

Directions:

Place prunes, boiling water, baking soda and brandy in a bowl. Sit for 12 hours.

Preheat oven at minimum temperature. Blend egg, sugar, oil and vanilla extract.

Add previously moistured prunes and milk and blend together. Add flour and blend.

4

Butter a 9-inch ring pan. Bake at 300°F for 40 minutes.
